VASILOPITA (Saint Basil’s Bread/New
Year’s Cake)

INGREDIENTS
250 gr. soft
butter 8 eggs 900 gr. flour 80 gr. cognac 500 gr. sugar Juice from 6-7
oranges 1 tsp baking soda 1 tsp orange zest 1 tsp baking
powder Powder sugar

PREPARATION
In glass bowl whip
butter until light and fluffy. In another bowl whip egg yolks with sugar
until fluffy. Add to butter and stir. Add cognac.
In a bowl, mix
baking soda with orange juice and as soon as they froth add to the butter
bowl. Separately, whip the egg whites to a tight meringue and add slowly to
the butter mix. Add the orange zest and baking powder and stir well. Add the
flour very slowly while stirring continuously, until a soft thick paste is
formed.
Pour into a
buttered round pan and bake for 50-60 minutes at 200 degrees. (It is done
if, when you dip a knife into the center, the knife comes out dry).
Let it cool for a
while before taking out from pan. Dust liberally with powder-sugar and
serve.
P.S.
To make powder-sugar designs, dust the sugar through a lacey-like paper you
can get from any sweet shop.
