8 ripe pears

leave stems
PREPARATION Boil the
wine with the sugar. When the mixture starts getting hot add the pears,
standing up, cover to cook and test with fork. When they are ready place
on a rack and put in the refrigerator until very cold. Mix the corn
flour with water and add to the boiled wine and stir to thicken the
sauce. Pour over the pears on the rack and put back in the refrigerator
until very icy. Melt the
chocolate in a bain-marie. Add the sunflower oil and slowly, some milk
stirring until you get a very thick sauce. Pour chocolate sauce over icy
pears. Serve with
ice cream or a 'strong' chocolate cake.
