Shellfish

Clams and squid, despite appearances, are closely related members of the mollusk family. Oysters, clams, mussels and scallops are called bivalve mollusks because they have a hinged shell of two parts. Squid, octopus and cuttlefish are cephalopods. They have an internal "shell" (called a quill), ink sacs and arms with suckers.

 Crustaceans (shrimp, lobster, crabs) are the other branch of the edible shellfish family.


 
When buying shellfish, remember they must be alive and raw; crustaceans should be animated when touched; bi-valve mollusks should be tightly shut, if the shells are partially open they should clamp shut when tapped, and should have a fresh briny aroma and no sign of an ammonia smell.
