SWEET TALKING

STRAWBERRY SORBET


Ingredients for Syrup

Less than half teaspoon of sweet sea salt
150 gr. water
250 gr. sugar
Half lemon
1 tbspn glucose
2 gelatine sheets
500 gr. Strawberries
Half wine glass grenadine
Few lemon drops

Preparation

Bring the first five ingredients to a boil. Then take off heat and leave to cool slightly. Keep the gelatine sheets in ice water for 10 minutes and then add to the syrup and stir so they melt.

Pick the more mature strawberries and mash well in a blender together with the grenadine and the drops of lemon juice. Add the slightly warm syrup and blend well.

Leave in the refrigerator overnight and the following day pour into a metal bowl together with a spoon. Place bowl in the freezer and stir every 10 minutes until it turns into smooth frozen custard and serve.
