SWEET TALKING

Annoula’s Currant Cake
With Dark Chocolate

 
INGREDIENTS:

375 gr. olive oil
150 gr. orange juice
240gr. sugar
50 gr. cognac
150 gr. raisins
150 gr. tepid water
150 gr. walnuts lightly crushed
550 gr. soft flour
1 tsp baking powder
1 tsp cinnamon
1 tsp soda
½ tsp cloves

 PREPARATION:

In a bowl put the raisins with water to cover and leave to soak and plump. In another bowl put the olive oil, orange juice, sugar, cognac, soda and stir till the sugar dissolves. Mix flour, baking powder, cinnamon, cloves and add to the olive oil, stir in a downward motion to mix the dough and add the raisins. Put the dough in an oiled and floured pan. Bake in a cool oven at 180ο for 45 minutes.

For the chocolate sauce:

1 tbsp dark chocolate
400 gr. hot water
200 gr glucose

PREPARATION:

Dissolve the glucose in the water and then the chocolate until it becomes a uniform and glossy sauce. When the cake is out of the oven, pour the chocolate sauce over it and wait until it's cold before serving.
